Protein Packed Sweet Potato Donuts

Sweet Potato Donuts 

If you eat four donuts, you'll probably feel pretty gross after. If you eat four of these, you'll be full all morning! Now, I don't recommend eating four of these (unless you're extremely active like me), but these sweet potato donuts are packed with protein, fiber, and won't crash your blood sugar like a normal donut might. They have a nice, airy but cakey texture, and are subtly sweet.

 

Ingredients

  • 1 large egg
  • 80g egg whites
  • 100g plain nonfat Greek yogurt
  • 28g butter, melted
  • 150g cooked sweet potato, mashed
  • 10g vanilla extract
  • 90g whole wheat flour
  • 15g whey protein powder
  • 15g casein protein powder
  • 35g brown sugar
  • 5g baking powder
  • 1g baking soda
  • 1.5g salt
  • 2g cinnamon

 

Instructions

  1. Prep your sweet potato by poking holes in it with a fork, lightly oiling the exterior, and baking it at 400°F for 45-60 minutes.
  2. Lower the oven to 350°F. Preheat and lightly grease a donut pan.
  3. In a large bowl, whisk together the mashed sweet potato, egg, egg whites, Greek yogurt, melted butter, and vanilla until smooth.
  4. In a separate bowl, mix whole wheat flour, whey, casein, brown sugar, baking powder, baking soda, salt, and cinnamon.
  5. Add wet ingredients to dry ingredients and mix just until combined into a batter.
  6. Optional: sprinkle brown sugar (not included in the above ingredients, roughly 10g between 6 molds if doing this step), or protein packed streusel into the molds
  7. Spoon or pipe batter evenly into the donut pan (fills about 12 donuts).
  8. Bake for 12–15 minutes, or until set and lightly golden.
  9. Cool slightly, then remove from pan and enjoy.
