High Protein Cinnamon Streusel


This high protein cinnamon streusel is designed for healthier baked goods — crisp on top, lightly sweet, and pretty darn macro friendly. By blending oat flour with whey protein and just enough fat to bind everything, you get that classic crumbly texture without blowing up the calories. Perfect for my muffins, baked donuts, or coffee cake.

This version makes a large batch, ideal for topping multiple recipes or one big bake.

 

Ingredients 

  • 80g oat flour
  • 40g vanilla whey protein powder
  • 40g coconut oil, melted
  • 60g brown sugar
  • 2 tsp cinnamon

Direction

  1. In a medium bowl, whisk together the oat flour, whey protein, brown sugar, and cinnamon.
  2. Drizzle in the melted coconut oil.
  3. Use a fork or your fingers to mix until a crumbly streusel forms.
  4. Sprinkle evenly over muffins, loaf batter, baked oats, or coffee cake.
  5. Bake according to your base recipe instructions until golden and fragrant.
