High Protein Cranberry Orange Muffins


These cranberry orange muffins are packed with protein and fiber, perfect for a cheeky breakfast, post workout snack or palate cleanser after dinner. They're super simple to make, but that doesn't take away from their mouth watering taste. In my opinion, the sweet streusel and slightly sour cranberries contrast perfectly. I will preface this by saying, I used about 85g of leftover orange marmalade (from the orange buns) instead of the zest and juice. If you opt for the marmalade, I would swap the 15ml of OJ for an extra 15ml of milk. Enjoy!!

 

Ingredients

Wet Ingredients

  • 1 large egg
  • 100g liquid egg whites
  • 150g 0% plain Greek yogurt
  • 85g unsweetened applesauce
  • 45 ml milk
  • 1 tbsp (15 ml) fresh orange juice
  • 1 tsp vanilla extract
  • 1 tbsp orange zest (from ~2 oranges)

Dry Ingredients

  • 70g all purpose flour
  • 30g oat flour
  • 30g almond flour
  • 40g vanilla whey protein powder
  • 35g date sugar
  • 25g ground flaxseed
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • 2 tsp cinnamon
  • ¼ tsp salt

Fold Ins

  • 120–150g fresh or frozen cranberries (do not thaw if frozen)
  • 85g orange marmalade if using instead of zest & OJ

Protein Streusel Topping

  • 40g oat flour
  • 20g vanilla whey protein powder
  • 20g coconut oil, melted
  • 30g brown sugar
  • 1 tsp cinnamon

Mix with a fork until crumbly.

 

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. In a large bowl, whisk together all wet ingredients until smooth.
  3. In a separate bowl, combine all dry ingredients.
  4. Add dry ingredients to wet and mix until just combined— do not overmix.
  5. Gently fold in cranberries (and marmalade if using)
  6. Divide batter evenly into 15 muffin cups.
  7. Sprinkle streusel evenly over each muffin.
  8. Bake for 20-24 minutes, until the tops are set and a toothpick comes out mostly clean.
  9. Let cool 10 minutes, then transfer to a wire rack.
