High Protein Orange Buns

I think the cinnamon/orange bun dough might be my best creation yet. It's soft & pillowy, almost identical to a bakery bun. These are packed with protein, and fairly low calorie. 

The biggest caveat is that the orange peel in the marmalade makes it pretty bitter. Two things you can do to combat this: add more sugar or maple syrup, or peel one or two oranges.

 

Ingredients

Orange Base

  • 3 oranges
  • 150g maple syrup 

Dough

  • 300g plain 0% Greek yogurt
  • 2 large eggs
  • 30g liquid egg whites
  • 1½ tsp vanilla extract
  • 45g coconut sugar
  • 270g all-purpose flour
  • 60g oat flour
  • 22g whey protein
  • 22g casein protein
  • 3 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt

Protein Orange Cream Glaze

  • 90g light cream cheese
  • 20g whey protein
  • 35g coconut sugar
  • 15g milk
  • Reserved orange marmalade

 

Instructions

  1. Wash and quarter the three oranges, placing them into a food processor. Purée the oranges until chunky. Add to a pan, stir in the maple syrup, and simmer over a low heat until slightly reduced and fragrant. Let cool.
  2. In a large bowl, whisk Greek yogurt, eggs, egg whites, and vanilla.
  3. In a separate bowl, whisk flours, whey, casein, baking powder, baking soda, and salt.
  4. Fold wet ingredients into dry until just combined. Dough will be soft and sticky.
  5. Flour your work surface, and roll out the dough until it's about a quarter inch around.
  6. Add about two thirds of your orange marmalade and spread evenly. Roll up the dough.
  7. Cut evenly into 16 portions and place in a lined or greased baking dish.
    Bake at 350°F (175°C) for 22–26 minutes, until set and lightly golden.
  8. Blend or whip cream cheese, whey, coconut sugar, milk, and a few spoonfuls of the orange marmalade together.
  9. Drizzle glaze over slightly warm buns. Let set before serving.
