Marinated Ginger Garlic Broccoli Stem Salad

Ingredients

Salad

  • 500g broccoli stems, peeled and thinly sliced
  • 1 red onion, very thinly sliced
  • 5 green onions, thinly sliced

Marinade

  • 60g rice vinegar
  • 20g apple cider vinegar
  • 40g honey
  • 10g sesame oil
  • 10g soy sauce
  • 5g fresh ginger, finely grated
  • 10g garlic, finely grated
  • 10g sesame seeds
  • 3g salt
  • 1g black pepper
  • ½ tsp red pepper flakes, optional

Directions

  1. Peel the tough outer layer from the broccoli stems. Slice the stems into thin coins or use a mandoline.
  2. Add the broccoli stems, red onion, and green onions to a large bowl.
  3. In a separate bowl, whisk together the rice vinegar, apple cider vinegar, honey, sesame oil, soy sauce, garlic, ginger, salt, pepper, and sesame seeds.
  4. Pour the marinade over the vegetables and toss thoroughly to coat.
  5. Cover and refrigerate for at least 30 minutes. For the best flavor, marinate for 3–4 hours, tossing once or twice.
  6. Serve chilled or slightly cool.
