Healthy Frangipane

If you love the rich almond flavor of traditional frangipane but want something lighter and more nutrient dense, my recipe delivers all the flavor with less sugar and fat. Almond meal provides a naturally buttery texture, while Greek yogurt adds moisture and protein. Use it as a filling for tarts, croissants, pastries, in a creami, or eat it by the spoonful. 

 

Ingredients

  • 120g almond meal
  • 1 large egg
  • 4ml vanilla extract
  • 10ml almond extract
  • 80g 0% Greek yogurt (or cottage cheese)
  • 30ml maple syrup
  • 4 Medjool dates, finely chopped

Instructions

  1.  Add everything to a food processor or blender, and blitz until smooth. You may need to scrape down the sides to ensure even mixing.
  2. Use as Desired. Spread the frangipane into a tart shell, layer beneath sliced fruit, fill pastries, or use in any recipe calling for almond cream.
