General Tso’s Broccoli Salad

Ingredients

Salad

  • 500g broccoli, cut into small florets
  • 175g carrots, shredded or julienned
  • 1 red bell pepper, thinly sliced
  • 4 scallions, sliced
  • 100g shelled edamame
  • 50g peanuts, roughly chopped

General Tso’s Dressing

  • 60g low-sodium soy sauce
  • 45g rice vinegar
  • 75g honey
  • 20g hoisin sauce
  • 15g water
  • 10g sesame oil
  • 10g fresh ginger, grated
  • 10g garlic, minced
  • 5g sriracha
  • 5g cornstarch

Instructions

  1. Blanch the broccoli: Bring a pot of salted water to a boil. Add broccoli and cook for 60–90 seconds, just until bright green and slightly tender.
  2. Immediately transfer the broccoli to cold water to stop the cooking. Drain and dry thoroughly.
  3. Prepare the dressing by whisking together the soy sauce, rice vinegar, honey, hoisin, water, sesame oil, ginger, garlic, sriracha, and cornstarch.
  4. Pour into a small saucepan and cook over medium-low heat for 2–3 minutes, whisking constantly, until glossy and slightly thickened.
  5. Let the dressing cool to room temperature.
  6. Combine broccoli, carrots, bell pepper, scallions, edamame, and peanuts in a large bowl.
  7. Pour over the cooled General Tso’s dressing and toss until everything is evenly coated.
  8. Refrigerate for at least 30 minutes before serving. The flavor gets even better after a few hours.
