Caramelized Leek & Onion Greek Yogurt Dip

Ingredients

  • 300g 0% Greek yogurt
  • 1 leek (~200g), white/light green parts, thinly sliced
  • 1 yellow onion (~200g), thinly sliced
  • 12g grated Parmesan
  • 10g olive oil
  • 10g butter
  • 10g Worcestershire sauce
  • 5g apple cider vinegar
  • 10g honey
  • 5g garlic, minced
  • 3g kosher salt
  • 1g black pepper
  • 1g onion powder
  • 1g garlic powder
  • 1g dried thyme

Directions

  1. Heat olive oil and butter over medium- ow heat. Add the leek, onion, and salt.
  2. Cook for 25–35 minutes, stirring occasionally, until deeply golden and jammy. Add a splash of water if they begin sticking.
  3. Add garlic, thyme, black pepper, onion powder, and garlic powder. Cook for 1–2 minutes.
  4. Stir in Worcestershire, apple cider vinegar, and honey. Cook another 1–2 minutes until mostly absorbed.
  5. Remove from heat and cool completely.
  6. Stir the caramelized mixture and Parmesan into the Greek yogurt.
  7. Refrigerate for at least 30 minutes, preferably a few hours.
