Healthier Plantain Tostones

In my video, I called these "one ingredient tortillas," which was just to stir up comments-- I know these tostones aren't tortillas, but they can be used in replace of tortillas for tacos!

Since we're not deep frying these, the calorie count is way lower than the traditional twice fried dish.

The secret to crispy tostones is the classic two step cooking method: air fry the plantains until tender, flatten them, dip them in a salty lime bath, then air fry them again until perfectly crisp. Serve them alongside grilled meats, seafood, rice dishes, chicken salad, or enjoy them as a snack with your favorite dipping sauce.

 

Ingredients

  • 2 green plantains
  • Juice of 1 lime
  • 1 teaspoon salt
  • 2 cups water

 

Instructions

Step 1: Prep the Plantains

Peel the green plantains and slice them into rounds about 1 inch thick. Depending on the size of your plantains, you should get approximately 10–12 pieces.

Step 2: First Air Fry

Place the plantain rounds in a single layer in your air fryer basket. Lightly spray with oil.

Air fry at 375°F for 10 minutes until slightly softened.

Step 3: Make the Lime Water

While the plantains cook, combine:

  • Juice of 1 lime
  • 2 cups water
  • 1 teaspoon salt

Stir until the salt dissolves.

Step 4: Flatten the Plantains

Remove the plantains from the air fryer and gently flatten each piece between parchment paper using a tostonera, tortilla press, a rolling pin, frying pan, the bottom of a glass, or a small plate.

Step 5: Soak

Dip each flattened plantain into the lime water mixture for a few seconds, allowing the salty citrus flavor to soak into the surface.

Step 6: Second Air Fry

Return the flattened plantains to the air fryer basket.

Spray with oil again, air fry at 400°F  for 6–7 minutes, or until golden brown and crispy around the edges.

Step 7: Serve

Serve immediately while hot and crispy. Add an extra sprinkle of salt if desired.
