Piña Colada Protein Granola

I don't know how this idea hit me, but it did and I'm not mad about it at all. This piña colada granola is so snackable, is great on smoothies or yogurt parfaits, great with fruit, and if you're feeling it, on it's own with milk. It's sweetened naturally, has 6 grams of protein a serving, and 6 grams of fiber. Now that's a perfect start your day and keep you full.
Ingredients
- 130g evaporated coconut milk
- 120g egg whites
- 5g vanilla extract
- 250g rolled oats
- 30g chia seeds
- 30g ground flax seeds
- 80g shredded coconut
- 30g vanilla whey protein powder
- 1/2 tsp salt
- 100g dried pineapple, chopped
- 145g pineapple chunks (fresh or canned, drained)
- Zest of 1 lime
Directions
- Preheat oven to 325°F and line a baking dish with parchment paper. Pre-cook the pineapple chunks for 10-15 minutes, or until the edges are slightly browned. This is going to help reduce moisture.
- In a large bowl, whisk together evaporated coconut milk, egg whites, and vanilla extract until smooth.
- Stir in oats, chia seeds, flax seeds, shredded coconut, protein powder, and salt. Mix until fully combined.
- Add chopped dried pineapple, and once cooled, the pineapple chunks. Hit the bowl with the zest of a lime, and mix evenly.
- Pour the granola onto a baking sheet lined pan and spread out in an even layer (you might need two baking sheets depending on their size). Bake for 35–45 minutes, turning/stirring the granola every 15 minutes.
- Cool and enjoy!
- Store in the fridge.
