Soft, fluffy, and packed with protein, these dinner rolls deliver the comforting texture of the classic homemade rolls with a more balanced macronutrient profile.
The combination of whey and casein protein helps increase the protein content without sacrificing internal tenderness. The Greek yogurt keeps the crumb moist and light. A dash of honey and melted butter adds just enough richness to create a pull apart dinner roll experience.
Ingredients
- 200g 0% Greek yogurt
- 1 large egg
- 30g liquid egg whites
- 180g all purpose flour
- 40g oat flour
- 15g whey protein powder
- 20g casein protein powder
- 4g instant yeast
- 4g baking powder
- 2g baking soda
- 4g salt
- 2g garlic powder
- 1g onion powder
- 20g honey
- 15g butter, melted
Directions
- In a large mixing bowl, whisk together the Greek yogurt, egg, egg whites, honey, and melted butter until smooth.
- In a separate bowl, combine the all purpose flour, oat flour, whey protein, casein protein, yeast, baking powder, baking soda, salt, garlic powder, and onion powder.
- Add the dry ingredients to the wet ingredients and mix until a shaggy dough forms.
- Using a stand mixer, knead the dough for 8 to 10 minutes until smooth and elastic. The dough should feel soft and slightly tacky but not overly sticky. Elbow grease works just as well.
- Let the dough rise in a warm place for 60–90 minutes, or until nearly doubled in size.
- Divide the dough into 8 equal portions and shape into smooth balls.
- Arrange the rolls in a lightly greased 8-inch round cake pan or similar baking dish.
- Cover and let proof for 30–45 minutes until puffy.
- Bake at 375°F for 18–20 minutes, or until golden brown on top.
- Let the rolls to cool for 10 minutes before serving.
