Apple Cinnamon Protein Muffins

If you love the cozy flavor of apple cinnamon muffins but don’t love the sugar crash afterward, this recipe is for you. These muffins keep all the warm, spiced goodness of the classic, but with extra protein, more fiber, and far less added sugar. The result? A muffin that tastes indulgent but fuels your body with long lasting energy.
Ingredients
Apple Mixture (you’ll use ¾ of this)
- 4 apples, peeled and chopped
- 30 ml apple cider vinegar
- 2 tablespoons cinnamon
- ¼ teaspoon nutmeg
- 75 ml water
Muffin Batter
- 1 whole egg
- 100 g egg whites
- 150 g 0% plain Greek yogurt
- 80 g unsweetened applesauce
- 60 ml milk
- 1 teaspoon vanilla extract
- 70 g all-purpose flour
- 30 g oat flour
- 30 g almond flour
- 30 g vanilla whey protein powder
- 35 g date sugar
- 25 g ground flax seeds
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- 2 teaspoons cinnamon
- ¼ teaspoon salt
Streusel Topping
- 20 g oat flour
- 10 g vanilla whey protein powder
- 10 g coconut oil
- 15 g brown sugar
- ½ teaspoon cinnamon
Instructions

Prepare apple mixture:
Add chopped apples, apple cider vinegar, cinnamon, nutmeg, and water to a saucepan. Cook on medium heat until softened, fragrant, and can be squished with a spatula. Set aside and let cool. You’ll use ¾ of this mixture for the muffins. -
Make the batter:
In a large bowl, whisk together the egg, egg whites, Greek yogurt, applesauce, milk, and vanilla. In a second bowl, mix the all purpose, oat, and almond flours along with the whey protein, date sugar, ground flaxseed, baking powder, baking soda, cinnamon, and salt. Fold in ¾ of the apple mixture until just combined. -
Make streusel topping:
In a third small bowl, combine oat flour, whey protein, coconut oil, brown sugar, and cinnamon. Mix with a fork until crumbly. -
Assemble:
Preheat oven to 350°F (175°C). Line a muffin tin with 12 liners. Divide the batter evenly into the cups, then sprinkle with streusel topping. -
Bake:
Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean. Let cool before serving.
