Protein Packed Sweet Potato Pancakes

Ingredients
Wet:
- Roughly 280g mashed sweet potatoes
- 115g nonfat Greek yogurt
- 180g skim milk
- 1 large egg
- 20g maple syrup
- 10g olive oil
Dry:
- 80g all purpose flour
- 40g oat flour
- 15g vanilla whey protein powder
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
Directions
- In a large bowl, whisk together the mashed sweet potatoes, Greek yogurt, milk, egg, maple syrup, and olive oil until smooth.
- In a separate bowl, mix flours, protein powder, baking powder, baking soda, salt, nutmeg, and cinnamon.
- Fold the dry ingredients into the wet mixture until just combined — don’t overmix.
- Heat a nonstick skillet or griddle over medium heat and lightly grease it.
- Ladle batter onto pan or griddle and cook until bubbles form, about 2–3 minutes (pan side should be golden brown). Flip and cook another 1–2 minutes until golden brown.
- Serve warm with a drizzle of real maple syrup or a dollop of Greek yogurt.
