Protein Packed Sweet Potato Pancakes

Ingredients

Wet:

  • Roughly 280g mashed sweet potatoes
  • 115g nonfat Greek yogurt 
  • 180g skim milk
  • 1 large egg
  • 20g maple syrup
  • 10g olive oil

Dry:

  • 80g all purpose flour
  • 40g oat flour 
  • 15g vanilla whey protein powder 
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg

Directions

  1. In a large bowl, whisk together the mashed sweet potatoes, Greek yogurt, milk, egg, maple syrup, and olive oil until smooth.
  2. In a separate bowl, mix flours, protein powder, baking powder, baking soda, salt, nutmeg, and cinnamon.
  3. Fold the dry ingredients into the wet mixture until just combined — don’t overmix.
  4. Heat a nonstick skillet or griddle over medium heat and lightly grease it.
  5. Ladle batter onto pan or griddle and cook until bubbles form, about 2–3 minutes (pan side should be golden brown). Flip and cook another 1–2 minutes until golden brown.
  6. Serve warm with a drizzle of real maple syrup or a dollop of Greek yogurt.
