No Bake Healthier Samoas 

Ah springtime, when we say goodbye to our seasonal depression... because of Girl Scout cookies right?!

If you're like me, and could eat a whole box of Samoas or Tagalongs in one sitting, this recipe is for you.

These no bake, healthier Samoas are packed with protein and fiber. They're delicious, and verrrry nutritious. Each cookie packs 5 grams of protein and 4 grams of fiber, which is excellent for a sweet treat.

 

Ingredients

  • 60g shredded coconut
  • 180g pitted dates
  • 75g 0% Greek yogurt
  • 40ml maple syrup
  • 30g peanut butter powder
  • 50g vanilla whey protein powder
  • 25g oat fiber
  • 10g inulin (chicory root fiber)
  • 10g ground flaxseed
  • 10g chia seeds
  • 60g chocolate chips
  • 7g coconut oil


Instructions

  1. Toast the coconut until lightly brown (60-90 seconds at 350)
  2. To a food processor, addd dates, Greek yogurt, and maple syrup. Blend until a thick paste forms.
  3. Add peanut butter powder, whey protein, oat fiber, inulin, flaxseed, chia seeds, and 75% of the shredded coconut. Leave the rest on the sheet pan. 
  4. Blend until a thick, sticky dough forms.
  5. Onto the coconut shred sheet pan, add the sticky dough. Wet your hands, and roll it into a log (the coconut shreds will help the dough not stick to the pan, and damp hands will keep the dough from sticking to your fingers!)
  6. Roll the log onto a piece of parchment paper. Add to freezer for a minimum of 30 minutes.
  7. Melt chocolate chips with coconut oil in short microwave bursts, or a toaster oven, then stir until smooth.
  8. Take the frozen log out, and cut it into 16 even circles. Flatten the circles out, and make a hole in the center using a chopstick.
  9. Grasping the cookie with your index finger inside the hole and thumb on the outside of the cookie, dip the cookie into the chocolate. Gently tap or shake to remove the excess chocolate. Place on a parchment lined sheet pan. Repeat.
  10. Sprinkle the leftover chocolate overtop the cookies. OR if you want to be fancy, put the remainder of the chocolate in a piping bag (or ziplock bag, cut the tiniest sliver off the corner), and pipe the chocolate over the cookies in thin lines.
  11. Store in the freezer. Enjoy!
