Healthy Double Chocolate Muffins

These protein packed chocolate muffins are the kind of thing you make once and then keep stocked in your freezer forever. They’re rich and fudgy, taste like a dessert, and somehow still pack 8 grams of protein in each. No dry, crumbly texture, no proteiny, or chalky aftertaste — just soft, chocolatey perfection that actually satisfies that sweet tooth.
The mix of Greek yogurt, whey protein, and a bit of almond flour keeps them moist and dense, while the melted chocolate kicks the flavor up a notch. They’re sweet enough to feel like a treat but balanced enough for breakfast, a post workout snack, or a healthy dessert!
Ingredients (makes 12 muffins)
- 1 large egg
- 100g egg whites
- 150g 0% Greek yogurt
- 80g unsweetened applesauce
- 60ml skim milk
- 8g (1½ tsp) vanilla extract
- 45g melted chocolate chips
- 60g all purpose flour
- 20g oat flour
- 40g almond flour
- 40g unsweetened cocoa powder
- 25g ground flax seeds
- 35g chocolate whey protein powder
- 35g coconut sugar
- 4g (1 tsp) baking powder
- 2g (½ tsp) baking soda
- 1g (¼ tsp) salt
- 45g chocolate chips (folded in)
Directions
- Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin or give it a quick spray with oil.
- Whisk together the wet ingredients — egg, egg whites, yogurt, applesauce, milk, vanilla until smooth.
- Add the first half of the chocolate chips to a heat safe bowl (with the milk, or on their own), and melt over a pot of steaming water. Stir until smooth. Once cooled, add to the rest of the wet ingredients.
- In another bowl, mix the dry ingredients: both flours, cocoa, flax, protein powder, coconut sugar, baking powder, baking soda, and salt.
- Combine them gently, just until the dry streaks disappear. Fold in the chocolate chips.
- Spoon into the muffin tin and bake for 15 minutes (underbake them slightly, they'll set as they cool. This keeps the muffins fudgier, and not dry).
- Let them cool for about 10 minutes before removing from the pan.
