Protein Packed Banana Bread

This banana bread is lightened up with Greek yogurt, egg whites, and applesauce, giving it more protein and less fat than a traditional recipe. Flax seeds and oat flour add extra fiber to keep you fuller longer, while ripe bananas and a touch of date sugar provide natural sweetness. It’s a moist, flavorful loaf you can enjoy any time of day without the sugar crash.

Ingredients

  • 1 egg
  • 100g egg whites
  • 150g 0% plain Greek yogurt
  • 80g unsweetened apple sauce
  • 60ml milk
  • 1 tsp vanilla extract
  • 70g all purpose flour
  • 30g oat flour
  • 30g almond flour
  • 40g vanilla whey protein powder
  • 30g date sugar
  • 25g ground flax seeds
  • 1.5 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/4 tsp salt
  • 3 ripe bananas, mashed
  • 30g chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, whisk together the egg, egg whites, Greek yogurt, apple sauce, milk, and vanilla extract until smooth.
  3. In a separate bowl, combine all flours, whey protein, date sugar, ground flax, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually stir the wet ingredients into the dry mixture until just combined.
  5. Add the bananas to a third bowl, mash into a paste, then mix in with the batter.
  6. Stir in the chocolate chips.
  7. Pour the batter into a parchment lined loaf pan.
  8. Bake for 60–70 minutes, covering with foil after the first 30 minutes to prevent over-browning.
  9. Allow to cool before slicing into 12 pieces.
