This banana bread is lightened up with Greek yogurt, egg whites, and applesauce, giving it more protein and less fat than a traditional recipe. Flax seeds and oat flour add extra fiber to keep you fuller longer, while ripe bananas and a touch of date sugar provide natural sweetness. It’s a moist, flavorful loaf you can enjoy any time of day without the sugar crash.
Ingredients
- 2 ripe bananas, mashed
- 1 egg
- 100g egg whites
- 150g 0% plain Greek yogurt
- 80g unsweetened apple sauce
- 60ml milk
- 1 tsp vanilla extract
- 70g all purpose flour
- 30g oat flour
- 30g almond flour
- 40g vanilla whey protein powder
- 35g coconut sugar
- 30g ground flax seeds
- 25g chia seeds
- 1.5 tsp baking powder
- 1/2 tsp baking soda
- 2 tsp cinnamon
- 1/8 tsp nutmeg
- 1/4 tsp salt
- 45g chocolate chips
- 50g walnuts, chopped
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, whisk together the egg, egg whites, Greek yogurt, apple sauce, milk, and vanilla extract until smooth.
- In a separate bowl, combine all flours, whey protein, date sugar, ground flax, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually stir the wet ingredients into the dry mixture until just combined.
- Add the bananas to a third bowl, mash into a paste, then mix in with the batter.
- Stir in the chocolate chips.
- Pour the batter into a parchment lined loaf pan.
- Bake for 40 minutes uncovered, then cover with foil for bake for an additional 10 to prevent over browning.
- Allow to cool before slicing into 10 pieces.
