Coffee Cake 

Coffee cake so good I had two make it twice. The loaf tin recipe does take longer, but provides for a perfect slice of low sugar, satisfying coffee cake. I felt like with the squares, I'd have to have two to be completely satisfied. Both routes are fantastic though.

Ingredients

1 egg

100g egg whites

150g 0% plain greek yogurt

80g unsweetened apple sauce

60ml milk

1 tsp vanilla extract

70g all purpose flour

30g oat flour

30g almond flour

30g vanilla whey protein powder 

35g date sugar

25g flax seeds, ground

1.5 tsp baking powder

1/2 tsp baking soda 

2 tsp cinnamon

1/4 tsp salt


Streusel

20g oat flour

10g vanilla whey protein powder

10g coconut oil

15g brown sugar

1/2 tsp cinnamon

 

Instructions

You'll need 3 mixing bowls, a baking dish, parchment paper, a whisk, a fork, measuring spoons, and a spatula. I always recommend using a kitchen scale (you'll need one for this since most everything is in grams).

Start by adding all the wet ingredients into a bowl; the egg, egg whites, yogurt, milk, vanilla extract, and apple sauce. Whisk everything together until combined.

Add the dry ingredients to a second bowl; all purpose flour, oat flour, almond flour, ground flax seeds, protein powder, baking powder, baking soda, date sugar (or your sweetener of choice), cinnamon, and salt. Again, whisk everything together until combined!

For the streusel, add all the ingredients to a third bowl & mix with a fork. 

Add the wet ingredients to the dry, stir until the batter is lumpless. Then add half of the batter to the parchment paper lined baking dish. Add half the steusel evenly, then repeat the process (second half of batter to the dish, then top with the remaining streusel).

Bake for 20 minutes (or until a tooth pick comes out clean), let cool & enjoy! 

Convection bake at 350° for 20 mins. 

*If using a loaf tin, line it with parchment paper and bake at 350° for 30 minutes, then cover with tin foil and bake for an additional 15 minutes.

The baking dish makes 16 pieces, nutrition per piece, while the loaf makes 12:

Double the streusel

109 cals, 7g protein, 12g carbs, 4g fat, 1.6g fiber, 5g sugar

Triple the streusel

126 cals, 7g protein, 14g carbs • 5g fat, 1.7g fiber, 6g sugar
