Protein & Fiber Packed Apple Granola

This apple granola is way more balanced than store bough versions. It's crunchy, naturally sweetened with apples and applesauce, packed with fiber from oats, chia, and quinoa, and boosted with whey protein to keep it filling. It's perfect for yogurt bowls, smoothie toppers, parfaits or just a lil snack.
Ingredients
- 240g unsweetened applesauce
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ½ tsp nutmeg
- 20g whey protein powder
- 250g rolled oats
- 45g dry quinoa
- 30g chia seeds
- 60g unsweetened shredded coconut
- 100g dried apples, chopped
- 150g fresh apple, finely diced
Directions
- Preheat oven to 325°F (165°C) and line a large baking sheet with parchment paper.
- In a large bowl, mix together the applesauce, vanilla, cinnamon, nutmeg, and whey protein until smooth.
- Add the oats, quinoa, chia seeds, and shredded coconut. Stir until everything is evenly coated.
- Fold in the dried apples and fresh diced apple.
- Spread the mixture evenly onto the prepared baking sheet.
- Bake for 30-35 minutes, stirring every 10 minutes to prevent burning and ensure even browning.
- Remove from the oven once golden and fragrant. Let cool completely — it will crisp up as it cools.
- Break into clusters and store in an airtight container.
Serving Suggestions
- Sprinkle over Greek yogurt or skyr
- Add to protein smoothie bowls
- Serve with milk like cereal
- Snack by the handful
