Protein Packed Chicken Alfredo Pinwheels


These Chicken Alfredo Pinwheels are perfect for a macro friendly game day snack. They're creamy, savory, and have about 10 grams of protein in each! They're great for meal prep, the 1:00pm slate, or a protein packed snack.

 

Ingredients

Dough

  • 100g all purpose flour
  • 100g 0% plain Greek yogurt
  • 5g baking powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder

Filling

  • 1 raw chicken breast, boiled & pulled
  • 2 large handfuls broccoli stems, finely chopped
  • 1 medium onion, diced
  • 150g Alfredo sauce
  • Note: You’ll use about 4/5 of the filling mixture

 

Instructions

  1. In a bowl, mix flour, greek yogurt, baking powder, salt, pepper, and garlic powder. Stir until a shaggy dough forms. Knead into a dough ball.
  2. Boil the chicken breast, then pull when cooled. Sauté the broccoli and onion until golden brown.
  3. In a bowl, mix chicken, broccoli, onion, and Alfredo sauce until evenly coated.
  4. Roll dough out into a thin rectangle on a lightly floured surface. Spread 4/5 of the filling evenly across the dough, leaving a small border.
  5. Roll tightly from the long edge into a log. Slice into 11 pinwheels.
  6. Place pinwheels on a parchment-lined baking sheet. Convection bake at 375°F for 16-18 minutes, until golden and cooked through.
  7. Let cool slightly before serving. They're great hot or cold, but probably won't last until they're cold.
